Overnight Baked French Toast with Blueberries
Serves: 12 servings
- Yields: 12 servings
Preheat oven to 350°F .
Combine brown sugar, cinnamon and melted butter. Mix well. Sprinkle ⅓ of mixture evenly in bottom of 9" x 13" pan. Cover with 6 slices of bread; you may have to cut pieces to fill pan. Sprinkle another ⅓ of mixture over bread and scatter berries on top. Place remaining bread on fruit. Sprinkle with remaining sugar mixture.
Beat eggs, milk and vanilla and salt together. Pour evenly over bread. Press down lightly. Cover with plastic wrap and refrigerate overnight. Bake uncovered for 40-45 minutes until puffed and golden.
For added sweetness and decadence, serve with pure maple syrup.
