Maple Roasted Sweet Potatoes

Preheat oven to 375°F.
Place sweet potatoes and cranberries in large lightly greased roasting pan.
Combine butter and maple syrup. Pour over sweet potatoes and cranberries, stirring to coat. Cover tightly with foil.
Bake 30-35 minutes or until potatoes are tender. Spoon into a serving dish and sprinkle with pecans.
- 3 large sweet potatoes, peeled & cubed
- 12 ounces frozen cranberries
- 1/2 cup butter or margarine
- 1/2 cup maple syrup
- 1/2 cup pecans, chopped & toasted
