Bubby Shirley's Honey Cake

  • Yields: up to 12 servings

Option of Small Tube Pan/Loaf or Standard Tube Pan (12 servings)
Preheat oven to 350°F.

Beat eggs and sugar
Slowly add oil and honey and blend until well combined
Dissolve baking soda in hot tea and set aside
Add baking powder and allspice to flour
Add flour mixture alternately with tea until incorporated

Do not over mix

Bake for 1 hour for small tube pan/loaf
Standard tube pan may require an additional 10-15 minutes

  • 2 extra-large eggs
  • 1 cup sugar
  • 1/2 cup oil
  • 1/2 cup honey
  • 1/2 cup strong tea
  • 1/2 teaspoon baking soda
  • 1 3/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon allspice
  • 1/2 cup walnuts, (optional)

Standard Tube Pan

  • 3 extra-large eggs
  • 1 1/2 cups sugar
  • 3/4 cup oil
  • 3/4 cup honey
  • 3/4 cup strong tea
  • 3/4 teaspoon baking soda
  • 2 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon allspice
  • 3/4 cup walnuts, (optional)
